In Elden ring there are two way to upgrade your weapon, the first is by using Smithing Stone Shards at the Smithing Table, this type of upgrade changes the Numerical Value of the Weapon (+1,+2,+3 etc.).

The second type of upgrade is through Ashes of War, these upgrades change the Affinity of your weapon which dictates which Stats it scales with, to do this upgrade you apply an Ash of War to your weapon which will then ask you if you wish to change the Affinity of your weapon.

Standard

 All Weapons and Shields This upgrade stays true to the weapons original scaling and adds no special damage types.  Ashes of War: Barricade Shield

Keen

 Swords, Katanas, Greatswords, Double-Edged Swords, Spears and Great Spears Increases Dexterity scaling but decreases Strength and Base damage Ashes of War: Piercing Fang

Ashes of War: Repeating Thrust

Quality

 Swords, Swords, Greatswords, Curved Swords, Double-Edged Swords, Spears , Great Spears, Hammers and Axes Increases Strength and Dexterity but decreases Base damage Ashes of War: Determination

Ashes of War: Stormblade

Ashes of War: Storm Stomp

Lightning

 Swords, Swords, Greatswords, Curved Swords, Double-Edged Swords, Spears , Great Spears, Hammers and Axes Adds Lighting damage but decreases Strength scaling, Base damage and Guarded damage negation Ashes of War: Thunderbolt

Magic

 Swords, Swords, Greatswords, Curved Swords, Double-Edged Swords, Spears , Great Spears, Hammers and Axes Adds Magic damage and Intelligence scaling but decreases Strength/Dexterity scaling, Base damage and Guarded damage negation (Except Magic defense) Ashes of War: Glintsword Arch

 Small Shields and Shields Adds Holy damage and Faith scaling but decreases Base damage, Strength scaling and Guarded damage negation (Except Holy defense) Ashes of War: Holy Ground
